In 2003, Giovanni and his family opened Dolce & Gelato in Sydney but struggled with inconsistent imported ingredients. Giovanni decided to start using local fruits and nuts to create his own gelato ingredients. The concept became popular, and in 2008, GIMA was founded. 

Within two years, GIMA's popularity skyrocketed, and the company began supplying numerous businesses across Australia, meeting the demand for high-quality, 100% Australian-made gelato ingredients.
