A Journey to the Heart of Vietnam
During Le Rendez-Vous, Weiss Chocolate and Eustralis Food organised a quiz for our guests, with the grand prize being a trip to Vietnam to visit the Li Chu 64% chocolate plantation and the Ben Tre region. Chef Guiral Delaporte, Pastry Chef at The Mondrian won the quiz and joined the journey alongside with long-time Eustralis Food client Yui Matsuzawa from La Renaissance Sydney, and Laurent Postiaux, our Queensland Sales Manager. The trip offered a firsthand experience of the Weiss plantation and a deeper understanding of sustainable chocolate production.
Sustainability and Artistry in Action
The Weiss plantation in Ben Tre, also known as the Coconut Region, is a place where expertise meets respect for nature. Surrounded by water from the Mekong River, the cocoa trees thrive under a natural canopy, offering the ideal environment for rich, complex beans. Laurent observed the full process, from harvesting and fermentation to drying.
“Cocoa beans are extremely thirsty, and here you can see how much care and water go into every step,” he explained. “The people behind Weiss do everything by hand. It feels far from a big corporation it’s about passion and doing something noble.”
