Caviar Baeri Royal

The source of this caviar is the 'Acipenser transmontanus' sturgeon.  It stands as the hallmark of Iranian artisans who've journeyed to Italy to impart their expertise.  Transmontanus caviar boasts surprisingly large grains and is cherished for its rich, smooth texture. Caviar should never be served on steel or stainless-steel plates or spoon, as this can alter the taste of the caviar.  That is why we use mother of pearl spoon to serve them, which is a neutral material and whose glimmering whiteness is an aesthetically pleasing contrast to the shiny black of the caviar.
