The luxury selection

The luxury selection establishes the tone of the service and underpins the premium associated with a Mother’s Day booking.

Caviar Kristal is one of Kaviari’s signature caviars, derived from a hybrid sturgeon (Acipenser schrenckii X Huso dauricus). The grains are firm, round and compact, ranging in colour from olive-green to gold, with a long finish of fresh almonds carrying subtle notes of honey and floral undertones.

Our Rougie Foie Gras Lobe (frozen) is supplied as an individually vacuum-packed, semi-cooked lobe of between 250g and 450g, seasoned only with salt to keep the flavour as close as possible to the raw product. Because the lobe is not deveined before poaching, it holds its structure and loses less fat when pan-fried than other foie gras formats. Pan-sear and serve on toasted brioche with a fruit chutney. 

The savoury selection

The savoury selection forms the core of the high tea experience. It should be substantial in flavour while remaining elegant enough to sit alongside the luxury and sweet courses.

Our Bread Sheets are produced in four colours, available individually as white, black, tomato and yellow. Designed to be rolled, cut and filled, they allow kitchens to produce striking finger food with minimal preparation.

The mini tart shell range is available in savoury, sweet, chocolate and gluten-free variants. Suggested fillings include whipped goat’s cheese with roasted beetroot, smoked salmon with French cream, or a mushroom duxelles. The shells hold their structure throughout service and allow most preparation to be completed in advance.

The Mini Brioche Buns are available in a colour mix for visual variety, or as a black brioche bun for a more refined, monochrome presentation. They suit slider-style preparation with confit duck, slow-braised lamb, or a vegetarian filling.

The Blinis 45mm from Le Monde des Crepes are small, airy crepe from Slavic culinary tradition. Warm briefly before plating and top with smoked ocean trout and French cream, or whipped ricotta with confit tomato. Just a few of countless combinations to suit your menu.

The sweet selection

The sweet selection is the course where the pastry section’s work is most visible to guests, and on which most photography and social media content focuses.

The authentic macaron mix offers six flavours in a single product: chocolate, vanilla, lemon, pistachio, raspberry and caramel, each with a 16.7% filling. For Mother’s Day specifically, the raspberry heart-shaped macaron (15g) features a buttery, crisp shell paired with a raspberry filling, delivered frozen and ready to thaw and serve.

The Canelé (60g) is a small pastry from Bordeaux, France, flavoured with vanilla and rum. Its soft centre is encased in a lightly caramelised layer, offering a clear point of differentiation from the scone and lamington formats common to Australian high tea menus.

The Mini Tropézienne (32g) is a delicate mini version of the iconic French Tropézienne: soft brioche filled with smooth, light cream and finished with pearl sugar. Ready-to-serve and perfectly portioned, it suits tiered stands and dessert platters with a premium look and consistent quality.
