Since opening in Sydney in 2018, L’Atelier by Eustralis has proudly welcomed chefs from around the world to share their skills, creativity, and passion with our beloved community. Each season, our training centre becomes a hub of inspiration, a place where innovation meets tradition, and where sharing is truly at the heart of everything we do.

The 2025 season was no exception. From delicate pastries to bold savoury creations and molecular artistry, this year was filled with learning, creativity, and unforgettable moments.

Chef Karim Bourgi – A Sweet Beginning to the Season


We kicked off the season with the incredible Chef Karim Bourgi, in collaboration with our long-time partner Les Vergers Boiron, the world’s leading fruit purée brand.


The mastermind behind KAYU, CALLA, and OPPA, Chef Karim is known for his bold flavour fusions seamlessly blending French classics with Eastern influences to create pastries that are nothing short of extraordinary.


His masterclasses Afternoon Tea & Petit Gâteaux and Viennoiseries ran for three unforgettable days, each filled with creativity, artistry, and a touch of fun (yes, he even won our now-famous ping-pong match!).


Participants got an exclusive taste of his stunning recipes, including, Tart Pompon, Pistache Chéri Tart, Teamtime Roll, and Mango Vanilla Roll Cake all available on our website.

Chef Mohamed Al Matin – The Art of Savoury Viennoiseries


Soon after, we welcomed Chef Mohamed Al Matin in collaboration with Corman Asia for a groundbreaking Savoury Viennoiseries masterclass, the very first of its kind at L’Atelier.


Over three intensive days, participants explored the transition from classic sweet viennoiseries to daring savoury creations. The results? Unique, flavour-packed pieces that surprised and delighted everyone. From bold ingredient pairings to eye-catching presentations, this session truly pushed the boundaries of what viennoiserie can be. 
 

Chef Alexis Bouillet – Modern French Pastry and Chocolate Artistry


Our “almost resident chef,” the illustrious French Pastry Chef Alexis Bouillet World Pastry Champion 2011 returned to L’Atelier to lead two very special hands-on masterclasses in proud partnership with Isigny Sainte-Mère, the iconic French house renowned for its unparalleled butter.


The first focused on Viennoiseries and Modern French Classics, blending tradition with contemporary design. The second was a deep dive into Chocolate Bonbons and Entremets, where technique met artistry in the most delicious way.


These sessions embodied what L’Atelier stands for: sharing, passion, and excellence. The creations that came out of Alexis’s classes were nothing short of stunning, with participants mastering his signature recipes available on our website:

Chef Loi Ming Ai – Molecular Christmas Magic


We wrapped up the season with the extraordinary Chef Ming Ai Loi, World Pastry Champion and co-founder of Voilà Patisserie in partnership with PCB Creation and Ingredium, for a festive Molecular Techniques masterclass.


With a Christmas theme to inspire the busy season ahead, this three-day session explored cutting-edge pastry techniques and presentation styles. The final applause said it all. Chef Ming Ai’s creativity and technical brilliance left everyone inspired and ready for the holidays.
