Les Vergers BOIRON Semi-candied fruits are frozen preparations, obtained by concentrating the juice and candying citrus fruit peel at moderate temperatures.

A simple yet marvellous way to breathe new life into your pastry, viennoiserie, cake, bread and pastry recipes. It can be mixed into a dough, a mousse, a ganache, a jam (in macarons for instance), a marshmallow, a sponge cake...

 

Contrary to classical canied fruits, Boiron semi-candied are not only cooked into sugar and  water, but mostly into fruit juice and puree (65% of juice, peel and puree in the finished product), at low temperature. This unique production process allow maintening the zesty flavor of fresh citrus.
